Avocado Toast

Ingredients
½ avocado
½ teaspoon of fresh lemon juice
1 egg
1 slice of bread
½ teaspoon of extra-virgin olive oil
Salt and pepper to taste
How to make:
- First, toast your bread.
- Then, combine the avocado, lemon juice, salt and pepper into a small bowl and gently mash them together with a fork.
- Finally, top your toasted bread with the mashed avocado mixture and a drizzle of olive oil, along with an egg cooked any way you like. Our favourite is sunny-side-up but poached, scrambled or hard-boiled work well too!
